This smoothie is a quick and nutritious breakfast or brunch. Inspired by days on the beach in Miami, I much prefer this rum free and nutrient dense version of the Miami Vice. If you're not sure of where to begin with protein powders, I recommend looking for one that's organic, non-GMO, sweetened naturally and has 5 ingredients or less. My personal favourites are Bare Blends pea protein or a plain and organic hemp seed protein. Enjoy!
Ingredients (Serves 1)
½ small zucchini (I recommend freezing zucchinis in portions)
1 cup frozen strawberries
1 serve organic vanilla pea protein powder
1 tsp psyllium husk
1 tsp chia seeds
1 tsp coconut oil or MCT oil
1/4 cup coconut cream
3/4 cups Coco Quench coconut milk
Add ingredients to the blender and blend until smooth. Due to the inclusion of zucchini, leave this to blend slightly longer than your average smoothie mix.
If desired, add a handful of ice and blend for a further minute.
