Piña Colada Smoothie

Yes, I originally made this smoothie because I wanted to sip on something that reminded me of a cocktail, but I was also looking for a way to incorporate Papaya (or Pawpaw, as I grew up calling it) into my day.
Papaya, native to Mexico, is a fleshy, vibrantly coloured, fibre rich, antioxidant rich and low carbohydrate fruit. A cup of Papaya contains less than half the carbohydrate of a cup of banana so it's great either on it's own as a low carbohydrate option or with other fruits for added flavour and texture.
Papaya is also high in an enzyme called papain that aids digestion. This combined with it's high fibre, high water content makes it great for supporting regular bowel motions and a healthy gut microbiome. In fact, in some South American cultures it's the 'go to' solution for constipation.

Ingredients (Serves 1)
3 cubes of spinach, frozen
3 – 5 mint leaves
0 - ¼ frozen banana
2/3 cup paw paw/papaya
the juice of ½ lime and a pinch of lime peel/rind
1 serve organic vanilla pea protein powder such as Bare Blends
1 tbsp chia seeds
½ cup coconut cream
1 tsp psyllium husk
½ - 1 cup water
Add ingredients to the blender and blend until smooth.
If desired, add a handful of ice and blend for a further minute.
